previously worked in a 2/3 AA awarded restaurant
experience working in AA-rosette restaurant or in a Michelin place
must have the working rights for the UK

currently or have worked as a Sous or Senior Chef in a fine dining/or 5\* hotel environment with Italian cuisine

Responsibility

delivering a restaurant menu to inspire locals, an afternoon tea menu that encourages loyal local business
assisting with recruitment, training and coaching a team of 12 Chefs and 4 Kitchen Porters
menu planning, supplier resourcing, ordering, delivery, storage, preparation, cooking and service across the range of food areas within the Hotel
ensure compliance with HACCP and food hygiene, health, and safety legislation
ensure targets are met in relation to payroll and food costs and that the brigade comply with all health & safety and food safety policies and procedures
location: Hertfordshire
hours: 48hour contract, strong focus on work/life balance

experiment with new and unfamiliar ingredients to create fresh and exciting flavours
train and support junior team members in the pastry section
ensure all desserts meet consistent, high standards
manage stock, ordering, and food costs for the pastry section
follow health and safety rules and keep the kitchen organised and clean
