Requirements

Responsibility


  • delivering a restaurant menu to inspire locals, an afternoon tea menu that encourages loyal local business
  • assisting with recruitment, training and coaching a team of 12 Chefs and 4 Kitchen Porters
  • menu planning, supplier resourcing, ordering, delivery, storage, preparation, cooking and service across the range of food areas within the Hotel
  • ensure compliance with HACCP and food hygiene, health, and safety legislation
  • ensure targets are met in relation to payroll and food costs and that the brigade comply with all health & safety and food safety policies and procedures
  • location: Hertfordshire
  • hours: 48hour contract, strong focus on work/life balance

  • assists in monitoring and controlling food costs, portion sizes, and wastage. Implements strategies to optimise ingredient utilisation, minimise expenses, and maximise profitability while maintaining quality standards
  • take charge of the pastry section, ensuring smooth daily operations
  • create and develop unique desserts that reflect West African influences and complement Akoko’s menu
  • experiment with new and unfamiliar ingredients to create fresh and exciting flavours
  • train and support junior team members in the pastry section
  • ensure all desserts meet consistent, high standards
  • manage stock, ordering, and food costs for the pastry section
  • follow health and safety rules and keep the kitchen organised and clean
