Responsibility
- ensuring dietary requirements are adhered to, and that clear labelling and management of catering and food delivery systems avoids potential contamination
- ensure meals are provided within the confines of a budget set by the Company
- establish food requirements and order all food stuffs, avoiding surpluses and shortages of products
- accountable for ensuring the kitchen meets all compliance, legal and company requirements as below
- produce high quality food offer for guests and staff within budget and on time, ensuring all dietary needs are met in line with legislation and guest needs, maintaining stock levels and minimizing wastage, general cleaning and maintaining hygienic environment, security of stock and catering premises
- to take food samples of all high-risk food in accordance with HACCP regulations
- prepare and cook for students and staff on a day-to-day basis to dish specs and costings, ensuring high standards of preparation, presentation, and the quality of food at all times
- maintain and monitor the daily HACCP records
Requirements
- NVQ Level 2 Food prep and cookery or equivalent or have extensive experience
- food hygiene level 2
