Responsibility
develop and maintain a diverse and exciting menu for our frozen food delivery service
recruitment, supervision and training of kitchen staff to ensure that all dishes are prepared consistently and to the highest standards
assign adequate staffing and resources to ensure operational requirements within the kitchen are met
liaise directly with the management team in relation to staffing issues, operational matters and to recommend menu development
ensuring the kitchen is kept clean and properly maintained and adheres to all food safety standards and associated requirements
actively develop new menu items, drawn from truly authentic Japanese cuisine, that will be capable of undergoing the freezing, delivery and home-preparation procedure whilst maintaining the highest quality
ensuring that health and safety standards within the kitchen are met
monitor ingredient costs and portion control to maintain profitability
Requirements
substantive experience as a Head Chef, Kitchen Manager or equivalent role, within a fast-paced and quality-first environment
successful leadership experience with excellent people management skills
ability to work under pressure and meet strict deadlines, so as to be able to meet delivery timescales to customers
strong awareness of health, safety and hygiene actions within a kitchen environment
cooking: 8 years
strong knowledge of the full spectrum of authentic Japanese cooking techniques, flavours and recipes, to act as the point of contact for other kitchen staff who may lack this knowledge or who may only be familiar with limited Japanese cuisine
language skills in Japanese to facilitate efficient communication with Japan-based suppliers and also with, for example, Japanese shareholders when reporting on kitchen performance and menu development
