Responsibility
- oversee food development across all food service areas in a collegiate manner
- to ensure all College policy training is offered and delivered to the team as agreed with the Head of Catering
- to ensure kitchen staff act in a respectful and dignified manner
- to work with the Head of Catering to provide the best possible standard of food and service to the College community and our Private Dining customers
- to design and monitor continual development plans for the kitchen team
- to ensure all our menus offered to clients are of an exceptional standard working closely with the Conference &Events Sales Manager and Head of Catering to ensure we are ahead of market trends
- to meet with clients with the Conference and Events Sales Manager/team on request, advising clients on bespoke menus to suit their needs
- ensure that all food costs are managed, and all costs are in line with budget expectations working closely with Procurement Manager and working to the College’s purchasing framework
Requirements
- previous experience in a similar role at management level
- experience of managing staff and food budgets within agreed limits
- strong creativity & good knowledge of culinary arts
- accuracy and attention to detail
- an NVQ Level 3 or above in Hospitality & Catering
- ability to work under pressure to meet deadlines
- BTEC Foundation Degree in Culinary Management
- intermediate Food Hygiene qualification
