Responsibility
to be responsible for the smooth operation of all areas of food production and delivery
to lead by example and exhibit a hands on management style
to ensure effective control of stock purchasing, receipt, storage, preparation and service with regard to quality, quantity and safety
commercial accountability for planning, organising and directing all operations of the kitchen
maintaining a high level of food quality and production with the aim of exceeding our guest’s expectations
ensure that the food safety policy is kept up to date and treated as a live document
menu planning with full costing of individual dishes in line with the expected GP percentage
determine menu changes after consultation with the Directors
Requirements
relative experience working in a busy environment
excellent Management and Leadership Skills
