Responsibility
- create menu items, recipes and developing dishes
- compile the list of and complete daily mise en place tasks to the required standard
- plan and execute menus in collaboration with other team members
- stock Ordering and food costing to achieve an agreed food gross profit
- verifies that food storage units all meet standards and are consistently well-managed
- taking charge of the kitchen, preparing dishes as designed together with the GM, and to the required standard within the allocated time
- manage ingredients that should be frequently available daily
