- efficient running of food service showing leadership and management skills to maintain a high-quality service
- full responsibility and liability for all costings and margin achievement
- seasonal menu changes including test cooks and costings focusing on seasonality and products from our range
- accurate stock taking ranges when requested by owners, so orders can be placed effectively
- full understanding of back-office reporting on sales mix/figures
- ensure principles of stock rotation are followed
- involvement and understanding of the business P&L, understanding outgoings and incomings and your role to play in improving
- ensure kitchen deliveries are put away in a timely fashion in the appropriate designated place
