- to plan, cost & produce suitable menu’s for the Hotel’s needs
- to ensure rotas are effective & efficient and within budgeted payroll costs
- to be responsible for achieving the food cost of sales budget
- to order all food items, control security, and minimise any wastage
- to conduct competitor price comparisons on food and food items as required
- to order non-food items as required i.e. crockery, utensils & equipment
- to oversee the cleaning rota for the kitchen and ensure that the standards are met and maintained at all times
- to order all cleaning products efficiently and cost effectively
