- maintain the highest possible standards for food preparation and sanitation
- ensure that all staff comply with food safety regulations and work to raise awareness with staff of current food safety issues
- motivate and direct kitchen staff in their work
- work to maintain a harmonious working relationship with kitchen staff and manage them effectively
- set clear standards of performance for kitchen staff and ensure that the standards are met
- oversee kitchen operations and ensure that the highest possible standards of cleanliness, sanitation and overall hygiene are maintained
- train new staff and keep an eye on them to check that they are properly taking on board all aspects of working in a busy, high-volume kitchen
