- assists head chef with the preparation, presentation, decoration and menu dishes
- provides direction to the Kitchen staff, including Chef de Partie and Kitchen porters
- ensuring that all working areas are kept clean and tidy at all times
- maintaining and managing the required high operational and personal standard of hygiene and presentation at all times
- ensuring that all handover procedures, opening /closing procedures are adhered to and recorded according to company standards
- control supplies and minimize wastage
- attends and participates in daily briefings and other meetings as scheduled
