determines staffing, financial, material's short-term and long-term requirements
discusses customer requirements for events, purchases supplies, arranges accounts, verifies the quality of food, waiting service and counter staff is as required, kitchen dining areas are kept clean, appropriate hygiene maintained in compliance with statutory requirements
plans and arranges food preparation in collaboration with other staff, checks that supplies are properly used and accounted for to prevent wastage and loss, and to keep within budget limit
