we have named our set menus as such, to demonstrate that we use the whole animal and plant, wasting almost nothing
this means getting creative with ingredients and thinking twice before anything goes in the bin
this is an opportunity for an individual who would like to further their knowledge and skills with seasonal cooking and sustainable kitchen practices
you would be working with the freshest, most local, and lovingly grown produce available as our sourcing policy dictates that we source the majority of our fresh produce from a 50-mile radius
our suppliers are carefully selected for their dedication to organic or regenerative practices and we also forage and grow some of our own fresh ingredients too
all applicants should have at least 2 years experience in a professional kitchen
this is a great environment to learn and develop
