supporting the Head Chef with the managing of the kitchen team to meet performance and staffing targets
provide takings on target, wage spend on target to hit quarterly forecast & targets
ensure food hygiene including full Cooksafe paperwork is maintained and up to date
committed to developing yourself and your team and keeping abreast of industry standards and key changes
create menus and specials in conjunction with the directors and managers, including fully costing each dish to ensure it consistently hits margin
being IT literate to ensure all back-office management is carried out efficiently and always up to date
help to monitor suppliers and deliveries to ensure they are always at the agreed prices, making sure stock levels are consistent with demand. Keeping wastage and stock levels to agreed limits
