Responsibility
- responsible for the daily coordination, improvement and execution of all food productions
- oversee production, planning, quality control and maintenance
- plan, organise, direct and co-ordinate the activities and resources necessary for production
- set quality standards and estimate timescales and costs
- observe quality of food and provide instructions for maintenance of high standards
- manage production to ensure that orders are completed to an agreed date and conform to customer and other requirements
- review inventory and requisitions and purchase food supplies as required
- monitor production costs and arrange for the preparation of reports and records
Requirements
- considerable experience in a high-volume food manufacturing unit; or any equivalent combination of training and experience
- thorough knowledge of institutional or commercial food service management procedures and practices
- cooking
- considerable knowledge of food values and nutrition
- ability to supervise the work of others
- ability to prepare work schedules for employees and to instruct subordinates in food manufacturing procedures
- ability to maintain a variety of operating and general records and to prepare reports
- manage and motivate a team to increase sales and ensure efficiency
