preparing, controlling and directing food preparation - organising the team and leading the kitchen
quality monitoring – having overall control for all dishes that leave the kitchen
health & Safety and Food Safety
financial - costing menu items to ensure value for the customer and profit for the business
people Management – you have the opportunity to tailor-make your own team in the kitchen to suit your vision for the menu, then take responsibility for coaching and mentoring your team
stock control and supplier relationships – find the best deals, work with existing and new suppliers to maximise GP targets and create great food, ensuring stock levels are monitored to reduce wastage
