The above role is to support the Head and Sous Chefs in the day to day running of the kitchen, including food production, stock and staff management.Key responsibilities· Be an Ambassador of Good Hotel (spokesperson, advocate and supporter).· Adhere to agreed procedures and policies within all food preparation areas.· Adhere to rigid cost controls across breakfast, lunch and dinner activities.· Comply with all local legal requirements, with particular focus on Saeker’s Food Safety.· Control and direct the food preparation process and any other relative activities.· Controlling agreed menu GP levels.· Ensuring food safety and hygiene is managed to high standards and meets all UK laws and regulations.· Maintain high standards of sanitation, cleanliness and safety in the food and beverage areas (using internal kitchen list) leaving the kitchen in a perfect condition and checking others before close.· Ensure proper care of all equipment.· Managing kitchen operations in the absence of Head Chef or Sous Chef (supervise shift to ensure that the production and performance are to standard).· Ensure shift is properly organized, staffed and supervised.· Preparation and cost control of staff food on daily basis.· Recording expenditures and costs for kitchen department.· Responsible for dealing with supplier, p
