Responsibility
confidently act as the shift leader when the GM or Assistant GM are not present. Even during the busiest weekend days
always be vigilant on stock-levels and let staff know when ingredients need re-stocking
complete all daily record sheets, including fridge temperatures and safety management, delivery temperatures, cleaning checklists etc
make sure the opening, middle of day and closing checklists are always completed for both FOH & BOH
offer assistance in all areas of the kitchen when required
ensure staff are taking sufficient breaks during shift, drinking water, and staying hydrated
know all due diligence, HACCP, and health and safety practices like the back of your hand. Know the reasons behind the cleanliness and safety procedures that we follow
understand the importance of quality control, and make sure you are upholding the highest standards. Hold people accountable and reference the staff handbook regularly
