Responsibility
managing meat intake to the Butchery from our own poultry processing unit and from our local abattoir
planning each week’s work and allocating tasks to team members to ensure all required work is completed in a timely fashion
managing the care and storage of meat including correct ageing of carcasses, avoidance of waste and general meat storage
primary and secondary butchering of all categories of meat and poultry
ensuring meat is in excellent condition when sold, with an adequate shelf life
at times responsible for training the trainee and apprentice butchers to develop their cutting skills
liaising with our farmers to ensure that meat and poultry supply from the farm is in balance with our processing capacity and our customer needs
working in other areas of the butchery, such as mince and sausage production, preparing orders etc as required
Requirements
high level butchery skills honed over several years
experience of managing a butchery operation, including managing other staff
ability to plan and organise multiple work streams and maintain an efficient operation
A genuine interest in how our animals are reared and in how we farm
