  • ensuring the supply pipeline meets current and forecast demand and any issues are flagged prior to becoming an issue

  • liaising with suppliers to ensure product standards are upheld and intake is smooth
  • working closely with farmers to ensure compliance with the business’s standards and values

  • liaising with suppliers regarding availability and delivery dates, updating our warehouse team accordingly

  • all aspects of butchery for carcass and primal breakdown work with Beef, Lamb, Mutton, Pork, Venison and Poultry
  • assisting Small Goods production of sausages, burgers, mince and stuffings when required
  • intake process controls, quality checks and grading of carcass deliveries
  • hanging fridges organisation and carcass transfers
  • issuing, weighing and labelling of all produce in line with works orders

Requirements

  • minimum 5 years’ experience as a butcher
  • excellent practical butchery skills
  • A highly skilled butcher with a passion and understanding of sustainable farming
  • knowledge of food safety requirements
  • knowledge of FSA requirements
