- ensure all logging of fire alarms and emergency lighting in accordance with the Fire Safety act 2005
- ensure the maintenance of all areas of the hotel are well maintained
- liase with house keeping staff so that the bedrooms are maintained to a high standard
- ability to work in a safe manner and adhere to good health and safety practices
- liase with General Manager so that all maintenance projects are complied with
- report any damage to or faulty equipment

- monitor and maintain consistent food standards and quality across all areas and during all
- stages of production
- maintain a safe and hygienic kitchen environment, ensuring the correct cleaning and closing down procedures are adhered to
- total accountability for the day to day running of the kitchen service in the absence of the Head Chef
- to participate in the design of seasonal menus and help to create new recipes
- ensure the Hotel’s Health and Safety Policy is fully promoted and arrangements have
- been made to carry out the policy
- to maintain all equipment within the catering operation and to arrange engineer call outs for repairs on equipment
- city & Guilds diplomas in professional cookery
- BTEC HND in professional cookery
- formal culinary training, previous restaurant experience with a high level of culinary skills
- an ability to stay calm when the pressure mounts
- A foundation degree in culinary arts
- health and safety and food hygiene certificates
- exceptional customer service skills
- strong leadership and organisational skills
- setting up tables for breakfast and/or dinner
- greeting and seating guests
- taking orders for and serving food and drinks
- clearing guest tables
- helping to clean down the dining room and kitchen including hoovering and mopping at the end of shifts
- at least 2 year experience in a hospitality job
