Responsibility
lead and manage all aspects of the food and beverage service in the restaurant and the catering outlet
line manage the Food and Beverage Supervisors – Kitchen and Restaurant, including ensuring the have the appropriate training and resources, and hold regular meetings and annual appraisals
line manage and task some of the Catering, Retail and Events assistants, whist working closely with the Head of Operations, Visitor Operations Manager and the Events Manager to ensure staff are appropriately tasked and trained to be able to cover all activities across the department, and that outstanding customer service is always delivered
be responsible for the daily pre-opening set up, through lunch service and during daily close down procedures, and oversee that the due diligence records are being completed
oversee monthly stock takes and monitor spend to coincide with profitable margin on sales
be responsible for maintaining our 5* EHO rating by ensuring that an excellent level of food hygiene is kept and that all due diligence and cleaning is carried out daily and recorded
control stock levels to keep food waste to a minimum
develop and plan seasonal catering offerings that suit a busy and fast paced customer environment yet also adapting to an off-season lower visitor number

be responsible for the overall maintenance and development of the Zoo’s site, including animal enclosures, buildings, grounds, equipment and department facilities
manage the maintenance team ensuring the smooth running of the department and site in accordance with legislation
be responsible for the control of the department expenditure within the agreed budget
ensure the communication with all department heads is effective, to ensure the smooth running of projects on site alongside other zoo critical department works
be responsible for the recruitment, training and development of maintenance staff, volunteers and where necessary contractors, to ensure they meet their contract obligations and comply with regulations
prepare estimates for budgets for the maintenance department annually in conjunction with the Head of Finance
be responsible for the implementation of, and compliance with, organisational health and safety policies and procedures within the maintenance team. Liaise closely with Head of Compliance and Resources on health and safety matters
